Although we recommend opening oysters with a
traditional oyster opener and mesh safety glove 
(available from Savoir Vivre - click on shellfish implements), 
the following method is a great alternative!

A QUICK OYSTER OPENER

Place oysters on baking sheet into an oven which has been preheated to 375 F. Keep in oven for 3 to 4 minutes. Remove and plunge immediately into a metal bowl filled with water and ice. The oysters will open immediately.

They should be plump, with a creamy, sandy color. Discard any oysters that are not alive, notably those that are dark or have a bluish or brownish color.

SERVING: The oysters, chilled with the ice, will be ready for eating. Simply sprinkle with lemon juice and freshly-ground pepper and serve.
